Chocolate baked cheesecake bar Children love this traybake, and it’s so easy to make. You can even freeze individual portions to place in lunchboxes straight from the freezer. We recommend you serve with a portion of your child’s favourite fruit. Preparation time: 10 minutes Cooking time: 25 minutes Portions: 24 lunch box portions • 100g butter, melted • 320g gluten free biscuits*, crushed • 25g cocoa powder*, plus extra for dusting • 340g soft cheese • 250g mascarpone • 200g sour cream • 3 eggs • 2 tbsp cornflour • 80g caster sugar Method 1 Heat oven to 160°C/140°C Fan/Gas Mark 3. Line the bottom of a 24 x 33cm tin with greaseproof paper 2 Melt the butter in a saucepan. Add the crushed biscuits and stir. Add the cocoa to combine, then press into the tin 3 Whisk all the other ingredients in a large bowl until thoroughly combined. Pour into the tin, then bake for 25 minutes until the cheesecake has just a slight wobble. Leave to cool 4 When it is completely cooled, dust with cocoa powder and remove from the tin. Slice into portions. Tip: For a plain cheesecake, simply leave out the cocoa. Traybakes are easier to portion, but for a classic deep baked cheesecake use half the amount of biscuits, butter and cocoa and bake for 35 minutes in an 8” round tin.
