It’s also quick to put together and the “base” of the recipe is a tasty blank canvas to add whatever fresh veg, meat or store cupboard ingredients you might have lying around. In the past I’ve used vegetable, chicken and beef stock (not all at the same time!) so choose your preference.” Serves: 2 Preparation time: 10 minutes Cooking time: 15-20 minutes • 1 tsp sunflower oil • 2 garlic cloves, crushed • 1 small red chilli, deseeded and roughly chopped • 3cm piece of ginger, peeled and finely chopped • 150g mushrooms, sliced • 5 collard greens leaves, hard stem removed, sliced • 400ml beef stock* • 1 ½ tsp tamari soy sauce (or gluten free soy sauce)* • 75g king prawns, frozen • ½ tsp fish sauce • 300g straight to wok rice noodles* • 1 lime, cut two wedges for serving and use the rest for juice To serve • 2 soft boiled eggs, halved • 1 spring onion, sliced • handful coriander, chopped • red chilli, sliced Method 1 Add the oil, garlic, red chilli and ginger into a deep saucepan and cook over a medium heat for about 3 minutes, making sure it does not burn 2 Next add the mushrooms and collard greens and cook for a further minute, then pour in the stock, tamari, fish sauce and bring to the boil. Then turn down to a simmer 3 Add in the prawns, rice noodles and lime juice. Cook on a simmer for 4 minutes or until the prawns are cooked, taste and add more tamari if you’d like it saltier or a splash of water if you’d like it less salty 4 Divide between two deep bowls and top with the spring onions, sliced chilli (optional), coriander and 2 halves of the soft boiled eggs in each bowl, with lime wedges.
