The sauce is a great way to sneak extra portions of vegetables into your kids’ diet – by using a variety of different coloured vegetables you’re adding a range of vitamins and minerals too!” Serves: 4 Preparation time: 10 minutes Cooking time : 30 minutes • 240g gluten free pasta* (about 60g dried pasta per serving) • 100g Parmesan cheese For the tomato sauce • 1 tbsp olive oil • 1 red pepper, finely chopped • 1 onion, finely chopped • 1 garlic clove, crushed • 1 medium carrot, peeled and grated • 400g tinned chopped tomatoes • 1 tbsp tomato purée • 1 vegetable stock cube* • 200ml water * Check our Food and Drink Information for suitable products. Method 1 Heat the oil in your pan. Add the garlic, onion and red pepper and cook for 3-4 minutes or until the onion and pepper is soft 2 Add the grated carrot, stock cube and water, chopped tomatoes and tomato purée. Cook for 15-20 minutes 3 Use a food processor or blender to blend ingredients into a smooth sauce 4 Meanwhile, cook the pasta according to the pack instructions. When it’s ready, combine the pasta and add the sauce. Sprinkle with parmesan cheese and serve with cucumber, carrot and pepper sticks for added crunch. Tip: You can make the night before and either serve as a pasta salad the next day or warm up in the morning to store in a flask.
