It’s a nutritious midweek meal and really quick to prepare when you’re short on time. The beans are a great source of protein, iron and fibre. They also count as one of your five fruit and vegetables in the day.” Serves: 2 Preparation time: 10 minutes Cooking time : 25 minutes • 1 tbsp vegetable oil • 1 x 400g can reduced sugar and salt baked beans* (or 1 x 400g tin haricot beans, ½ tin chopped tomatoes, 1 tablespoon tomato puree, 1 teaspoon soft brown sugar, 2 tsp smoked paprika and 1 tablespoon spirit vinegar or red vinegar) • 1 small onion, finely chopped • ¼ tin chopped tomatoes • 1 clove garlic, crushed • ½ inch piece of ginger, peeled and grated • 1 tsp coriander • ½ tsp cumin powder • ½ cup of water • ¼ bunch coriander leaves, chopped (optional) • 2 jacket potatoes, cooked Method 1 Heat the oil in the pan and add the chopped onions. Cook on a medium heat until they’re brown and soft 2 Add the chopped tomatoes and cook for a further minute 3 Then add ginger and garlic and cook for 1 minute 4 Add coriander, turmeric, and cumin powders, and stir 5 Add the can of baked beans, (or haricot beans ½ tin tomatoes, tomato puree, soft brown sugar, smoked paprika and vinegar) 6 Add the water and let the curry cook for a further 5 minutes on a medium heat. (10-15 minutes if using haricot beans). Add a splash of water if the curry starts to stick 7 Turn the heat off and add the chopped coriander leaves to garnish 8 Serve with jacket potatoes or gluten free chapati.
