ho is the authentic Vietnamese street
food restaurant started by husband and
wife team Stephen and Juliette Wall in
2005. The couple were inspired to open the UK’s
first speciality pho restaurant after quitting their
jobs, travelling around the world, and falling in love
with Vietnam’s national dish: pho. We asked them to
tell us about their restaurants and why GF accreditation
was important to them …
Stephen and Juliette from Pho cafe explain...
“Pho, pronounced ‘fuh,’ is a delicious and nutritious noodle soup, and this is at the heart
of the menu at Pho restaurants. The vast majority of our menu is egg and dairy free
and made from ingredients containing no gluten. All food at Pho is made fresh to order
within each restaurant, so we have total control over what we serve.”
GF accreditation
“Because the main ingredients of our menu are naturally gluten-free, we have been
loved by people with coeliac disease for years, along with those following a dairy and
egg free diet. We have a lot of loyal gluten-free customers and that is the reason why
we wanted to obtain GF accreditation. We saw the opportunity to make our menu 99%
gluten-free (rather than having to create a special gluten-free menu to live alongside
our regular one) when we realised that only a few ingredients in our kitchen contained
gluten, so we made the decision to replace them with certified gluten-free options, such
as soy sauce. We have worked closely with Coeliac UK during the accreditation process
and now with our menu 99% gluten-free we are working on the last remaining dessert
that contains gluten and are aiming to have a 100% gluten-free menu in the future.
We now have 18 restaurants, mainly in London but also in Brighton, Birmingham,
Leeds, Manchester and our newly opened restaurant in Cambridge. We offer takeaway
Pho to Go and also home delivery via Deliveroo.”
